My Bitcoins were left in Coinbase during the hard fork.  Bitcoin Cash was generated & Coinbase says in Jan 2018 that we’ll be able to access them.
I would like to move my Bitcoins to Jaxx or Airbitz before the SegWit2X hard fork.  When I do, will I still be able to claim the Bitcoin Cash at Coinbase?  I will still keep an open account with Coinbase.

Yes, so long as your coins were on Coinbase when the Bitcoin Cash fork occured on August 1st, and provided you keep your Coinbase account open, then you should be able to claim them in January. Of course, this depends on Coinbase properly implementing support for Bcash by then… Delays can happen.
 
As for using Jaxx wallet, I’d advise against it. There’s still an outstanding security issue with Jaxx. See the warning at the top of our Jaxx review:

As far as I know, this issue only applies to desktop wallets and you are probably looking at an Android wallet, as you mentioned AirBitz. However, as Jaxx haven’t resolved the issue, I’m concered about their committment to wallet security. I’d recommend AirBitz instead, or any of the other Android wallets listed on Bitcoin.org:
